A single vintage, vineyard and variety of sparkling wine. A cooler vintage led to beautiful freshness and bright citrus fruits. This wine was gently whole cluster pressed to avoid any hard phenolics and maintain a clean, neutral based wine. It was fermented in stainless steel for primary fermentation and was but on tirage or secondary fermentation in 2020. This 100% Chardonnay based wine was aged on lees for 54 months.
It is bright straw in colour with an active mousse of tiny bubbles; biscuity nose of green apple; medium-bodied, crispy dry, well-structured, well-balanced flavours of apple and lemon; lovely mouth feel, great length.
